YouTube - Chef Martin Yan, Interviewed by Cooking.com

I thought this interview was interesting, particularly for his answer to the required seasonings.

He lists 6 seasonings that will let you cook a wide range of chinese dishes and these are fairly easy to find.

He lists:

light soy sauce (this refers to color and intensity, not sodium or calories)
dark soy sauce (sweeter, thicker, darker)
oyster sauce
toasted pure sesame oil
rice wine
rice vinegar

Then as a second tier he mentions hoisin sauce.

That's really a good list for someone getting into chinese cooking as it does cover a wide range of possibilities.
