Whole Wheat Bread Recipe Please

Hi Everybody,

I used to have a really good recipe for Whole Wheat Bread that was tender and moist. I recently moved and the recipe didn’t make through the move. I’ve been making White bread but the wheat is tastier and healthier. Do any of you have a good recipe for me?

Check out Peter Reinhart's Transitional Whole Wheat Sandwich Bread, in his Whole Grain Breads. It comes out exactly as you describe.

I usually double the recipe, and make two large sandwich loaves.

I can't seem to find the recipe. I'm only finding places tp buy the book and I don't want to do that.

I'll see if I can get it typed out. It'll take awhile, though, cuz the recipe is long and complex.

WW dough

Whole Wheat Lean

Bread Flour 60% 9 1/2 oz
WW Flour 40% 6 1/4 oz
Instant Dry Yeast .75% 4 grams
Water 70% 11 oz
Salt 2.2% 10 grams
Optional add:
Oil 4.4 % 20 grams
malt syrup 4.4 % OR 20 grams
honey 4.4 % 20 grams

Soak the WW Flour in the water for about 10 min.
Add the rest of the ingredients and devlop on 1st speed for about 3 min and 2nd speed for 3 min.

PS, you can use a higher % of ww flour if you like.
I like to add extra bran and sometimes oats (in place of a portion of the flours)
bake first, ask questions later.
