In the UK one of my passions was cakes and although I never baked in a professional capacity I made a fair number of wedding cakes and fantasy cakes for family, friends and other people who had seen my cakes. I have attended a few different courses on various cake crafts including gum paste flowers (which is my passion), pastillage, extension work etc and feel that I am fairly good as these techniques. With time now on my hands I would love to do the same thing over here. My one concern is that in the UK most wedding cakes were fruit cakes and whilst I have baked and covered sponge cakes it is not something I have done a great deal of. I am thinking of doing a couple of the further education classes at the Notter Pastry School which is not too far away from me, to learn more about cake baking techniques and to brush up on some of the other skills.
However, before I go down this road I would appreciate any advice. As I would plan to do this from home I am not sure what the legalities would be and whether I need to obtain a licence. I am not planning on it being a big time concern just something to fulfil my passion and keep me busy!
Any advice would be greatly appreciated.
