Kaiser Rolls- Retard overnight???

I have recently fallen in love with Peter Reinhart’s Bread Maker’s Apprentice book. Every recipe I have tried far surpasses my old standby recipes.

I really like how I shape his bagels one day, then retard them in the fridge overnight, then boil and bake the following day.

Is it possible to also do this with his Kaiser rolls? I would like to make the dough, shape the rolls, then place them on a cookie sheet in the fridge overnight. Then bake them the following day. Will this work?

Just trying to brainstorm ideas on how to simplify a very busy baking day for a large family party.

wow! ima be watchin this post, cause i wanna to the same with soft pretzels. wondering doint the final step of dipping them in boiling water, then letting them sit in the fridge over night will work.

Yes, but then they should be proofed when you take out of fridge.

Great, thank you. Would it be best to retard the dough in a bowl, then shape the next morning or should I just shape them the night before?

Shape night before, this way you can just pop in proof box and bake., and if you came in late you woulkd not be in the weeds.:)
