freezing fruit

i just move to a new country that have 4 seasons so some times i have difficultly to have some fruit all year long, then my friend said that you can freeze fruit , so you can use it whenever you want , sooo my question is :
1) can fruit be frozen??
2) what fruit can be frozen???
3) is peach, plum, apricot,figs, stawberies and other beries can also be frozen??
4) how to frozen them???

They can be frozen but will not come out same as when you froze them. I freeze mine useing a dry sugar method. I put strawberries in a bowl toss them with sugar and freeze them. I tried to do it IQF style but not as good. Fresh Pineapple actually in some cases comes out better. Dont expect to be able to pick it up and eat it out of your hand, because you cant. Our home freezers do not freeze as fast as commercial,so it effects them slighltly. :chef:

If you want to be able to scoop out specific amounts of your frozen fruits, rather than having one big frozen lump, scatter the fruit out in a single layer on a cookie sheet, and then freeze. After it's frozen solid, you can put it in a bag or container.

In my answer above to the freezing fruit problem I mentioned IQF which is trade talk for what you are saying, freezing seperate . However I have found after testing the sugar method works better. It does not totaly freeze together as sugar is difficult to freeze at the temp of most home freezers. When you put a spoon into the mass of fruit it will come out. :lips:

They can be frozen but as Ed says they will not thaw out the same. I use frozen fruit for making smoothies, which I can't get enough of!
