Ideas for rendered turkey fat

My turkey this year had LOTs of fat. Huge collar of it around the neck, plenty at the entrance to the cavity plus bits here and there.

As a fan of schmaltz, i decided to render a bunch of it down and ended up with about 2 1/2 cups. Which is more than I have ideas for. So I'm looking for some more uses for turkey fat.

And yes, the turkey was moist and flavorful. Not brined.

Well the standard homefries comes to mind. I have done that with chicken fat. Toss a couple eggs in towards the end for an omlet. Use it when oven roasting veggies, that is super good with chicken fat.
