Freeze for Later Dinners

One of my colleagues has been recently diagnosed with Lymphoma. She will be getting Chemo on and off for the next 6 months. Some of my other coworkers and I, are planning on bringing her some home cooked frozen dinners each month to help out on days she (or her husband) aren't feeling up to cooking. I am looking for some good ideas of foods that freeze well. Oh and they probably shouldn't be spicy since the chemo affects taste and mouth sensitivity.

Sorry that your colleague is going through this.

For plain staples, cooked rice and cooked noodles freeze well in sealed bags (squeeze the air out). For noodles, rinse with cold water as soon as they're done cooking, toss with just a little oil so they don't stick together, then put in sealable bags. For rice, just let it cool before putting it into sealed bags to freeze.

In general, most things that are covered with a sauce freeze well. For example, plain cut-up cooked turkey is not very good after being frozen, but if surrounded with gravy it's great nuked, even after being frozen a couple of months.

Bean soups are another one I like. A lot of veges will get mushy when frozen, but beans (shell type) hold up well. There should be enough liquid in the containers to cover the beans for freezing. Ham and bean soup is a great one. Other veges such as celery and sweet peppers, cut up into small pieces, are good in it.

I'm not a pro, but I am talking from experience.

I just chatted with a close friend who recently had chemotherapy and is trying to get back to normal. She said red meat tasted bad (metallic), poultry tasted pretty good and veges tasted good, especially brocolli. Your friend might have different preferences, but letting you know what my friend says.

Lasagna freezes well. Meatloaf. Pot pie, pot roast.


Just thought of another. Waffles. Freeze and toss in toaster to reheat.

Can't leave out soups for the days she may not have enough energy to chew a lot. Chicken wild rice, veggie beef, etc. are all comfort foods. Mashed potatoes actually freeze fairly well also, I put it heaped in ice cube trays, freeze, then into a ziplock and take out only as much as I need.

If you've got enough time make a huge pot of good chicken stock, Lynn Rosetto Kasper had a recipe for triple rich stock....just load up the pot with stewing hens.

Any braises....lamb shanks, pot roast.....
My dear friend had two different rounds of chemo and she ate alot of chicken and rice. Numerous things upset her stomach.
Her husband may get really tired of eating bland, if you've got the inclination make some options for him that aren't bland.

I think making him something with spice as well as less intense flavors for her is definitely something I will do. I have a very hard time cooking bland. I was raised cooking cajun, but I know she won't be able to tolerate much spice.

Great ideas. I make some really good waffles with peaches in the batter. I think I will make her some.
