Egg White Omelets ...

... can't tolerate them myself, however, there's an elderly lady that I cook for a few times a week, and it would be a Good Thing to make her such an omelet. Never having made any of any note, cooking suggestions and ingredient ideas are welcome.

Any preperation done to a regular omelet can be used . She is probably on a 0 fat cholesterol free diet so if possible use pam instead of butter or margarine. Fresh veges, spinach etc. low fat cheese or cottage cheese. I have used fresh sliced strawberries and cottage cheese. (Non stick pan on this project if possible):)

She's not on a low fat/low cholesteral diet, but I do want to keep her cholesteral intake down. I was thinking about spinach and some bacon as a good option for her. She's diabetic, and having some fat is a good idea to help mitigate any carbs she takes up. The bacon - lean and prepared in the oven - helps, as does using a low glycemic value bread.

Thanks for the prep tips. That's really what I needed. I talked with her this morning and she's really up for the egg white omelet.

The Food TV program "Big Daddy's House" did an egg-white omelet just a half-hour ago.

Look it up; it looked pretty good.

I did and couldn't find it. I searched through all of Aaron's recipes and there was nothing posted for an omelet of any source.

egg whites

i am a breakfast cook and cook egg white omelets daily. i always use 4 egg whites in a 10 inch non stick pan. most popular would be the veggie which is onion, green pepper, tomato, shrooms and spinach. our popeye (spinach, onion, bacon and swiss) is also quite popular as an egg white omelet. the spinach looks great in the whites. remember to let those egg whites set up longer than regular egg wash before flipping (if you do so) otherwise you will have a scrambled mess on your hands
