Those of you who have spent time on the South Side know what I'm talking about, just from the title. Harold's Chicken Shack, king of Chicago fried chicken. I want to make this at home... in Japan.

Three parts: the fried chicken, the mild sauce, and the hot sauce. (The white bread and fries I'm okay with.)

I crave the stuff, so any suggestions for how to make it at home? I know they fry in 50% beef tallow, which I'm not going to emulate given the cost of beef here, but other than that I don't have a lot of guesses.
