My name is Kelly. I have been a chef for 25 years, mostly in high end / fine dining in Santa Fe, NM and in Texas. Now I am in my 3rd year owning and operating my own cafe in Fredericksburg, Texas- Kelly's Cafe. Fredericksburg, a quaint historic town of 10,000 is in the Texas Hill Country 1 hour north of San Antonio and 1.25 hours from Austin. We are also 3.5 hours from Dallas ans Houston which makes us available to millions of potential tourists. Any way I work in my restaurant 6 days a week from morning to night ( open to close ) and I love it. Thats all I do except for a little golf, and working with our new Farmers Market!!

There are lots of interesting discussions on here, with all level of participants from thosewho can barely recognise a saucepan to master chefs! I do hope you will read some of the topics and perhaps post topics about your own areas of interest in the cooking world (and beyond!)

What type of cafe do you own if you don't mind my asking? I just started doing work for a cafe by my house. What kind of food do you serve/ cook onsite?

Keeping It Simple

Our tag line is "Hand Crafted American Food" out of respect for all cuisines that are American. This left a large palette of possibilities, being that we are a melting pot of world cultures . Not being formally trained and self taught I have not relied so much on European techniques but New World techniques.-Everything is fabricated on sight as it should be and therefore the products , although simple and rustic, are done with integrity, care and respect for tradition.
