MUFFIN PROBLEM - help me!!!

Hi Chefs,
i have tried various muffin recipes from the net but my muffin crust always gets hard.
Any tip on that??/

Don't know what elevation you are at...

But assuming around sealevel, add and extra egg and half again as much fat (oil)

If it is just getting hard this should do it.... if it is also browning real hard, cut he heat by 25 F......

Oven's too hot. I actually like muffins baked that way.

How far above sea level are you?

add more oil to mix for softer moister cakes and muffins.

if useing convection oven drop temp 25 degrees or so.:bounce:
