carrot greens - edible? tasty?

I often can get carrots at the market with all the greens attached. I usually like to use the greens of root vegetables, like turnips and beets (not, of course, potatoes!).
I've heard mixed opinions about carrot greens, and wondered if anyone has any knowledge about them. I heard they were not good for you, and another said they were edible and used in soups.

OMG, maybe they ARE toxic and fused my brain cells! Reading the old post jogged my memory. I think i had read about using them, or someone told me to use them or i got a recipe using them in that soup- I kind of remember making it back then with them, then got sick of carrot soup and stopped.
Then two years later i heard about them being toxic and i completely forgot about that period when i was using them.
Getting old, i guess. sorry about that.

I'm glad you brought up the topic currently because I had been thinking of cooking carrot greens as you mentioned with so many of the other greens. I just hadn't really looked into it and your question prompted me to go ahead and research it. I guess I'll just add the carrot tops to the compost pile.

wait a minute, what do you know? you researched it and they said nthey were toxic??? why would you put them in the compost pile otherwise. please share

There are quite a few food items that are classified mildly toxic. Normally this is the part of the item that we do not eat. IE Peach pits, avacado seed, carrot tops. None of them will kill you but in large quantities could hurt you. A green tinged potato contains minute amounts of arsenic as does peach pits. However to much milk will also make you sick ,everything in moderation is the rule.:bounce:

PS. On a compost pile and ingesting are two different things.

Arsenic in peach pits? Perhaps you mean cyanide? Arsenic is a heavy metal. :look:

The cyanide in peach pits, as well as in other foods, occurs naturally. The water soluable arsenic that is found in potatoes and other produce, occurs because it has been absorbed either from contaminated soil or water, or because it is present naturally, or from the use of pesticides.

It is my understanding that the green you see on potatoes, while potentially toxic, is not because of arsenic, but rather it is a chemical reaction that happens as a result of the potatoes being exposed to strong sunlight. When I was growing up, we raised our own potatoes. The only arsenic they were exposed to was what was present in the soil naturally. In our area of PA, arsenic in the soil was practically non-existant. Potatoes were dug and then covered with several layers of burlap to protect them from the sun, while they cured for storage. If they were not covered, they would develop the green color, and Mother would cut away all the green before cooking them, saying it could make us sick. I don't know how much "green" one would have to consume before becoming ill, but even now, I don't purchase green potatoes for that reason.

addition: a brief "google" reveals that the toxins in potatoes are solanine and aflactoxin, and may bear some resemblence to arsenic. Is anyone else as confused now as I am?

I notice the potato chip manufacturers leave the green on ,it is cooked however, cashews are anothe taboo in there raw state I was always told they were deadly. I dont know how many of these things in food i believe or how many are old wives tails.I remember when younger, eat chicken soup for a cold, sounded crazy however later science revealed the bones of the poultry did contain minute traces pf penicyllin. So really who knows. This week brocolli is good for treating cancer, next week it gives you cancer?

Out of curiosity, I googled cashews, and discovered that they are related to poison ivy. In their raw state cashews contain a toxic resin that heating them removes. The "raw" cashews sold in natural food stores are not truly raw, although they have been processed only minimally.

As for broccoli, I don't know if it causes anything but gas. :look:

I buy a 30 pound tin of Blanched cashews, the tin says it comes from India. Somewhere way back I remember hearing that in the US it is illegal to sell or import fresh or un blanched cashews.

Sounds like the blanching exposes the nuts to just enough heat to neutralize the toxin.

there is no toxin in cashew nuts. the toxin in is the shell. steaming is used to remove the shell and skin, but has no bearing on "toxic" - not unlike eating a cow. they have horns; when improperly sequenced and you try to eat them, they get mad and you could get gored by the cow horn.

urushiol is the chemical compound in question; found also in poison ivy. if you keel over dead on sight of poison ivy, you may have an issue with cashews.

if you are allergic to hot lead at high velocity, you would be well advised to avoid being shot.

solanine is the issue with green tinged potato. again, if you are exceeding allergic, it's a problem; an exceptionally small portion of the human population is allergic to such a degree. the green part is actually chlorophyll - see: high school science - but it indicates the probably presence of solanine. solanine also results from poor storage temperature control. solanine is also exceptionally bitter - so peel it off.
