Cheese soup ideas wanted

So I'm thinking about some cheese soup. A fairly broad topic, could cover a lot of bases. Your basic cheddar and cream, or maybe blobs of baked brie and browned mushrooms in a light broth, perhaps parmesan rinds in some sort of red wine, tomato concoction. Gruyere and roast garlic added to cream of potato, ...

Any recipes, ideas, whatever?

My favorite is beer cheese soup made with white cheddar. I don't use a recipe but its made with bacon, drain some of the fat and fry some celery and onions, add a can chicken stock (or homemade if you have some on hand) and a can of beer. Bring this to a simmer and cook until the veggies are tender. Grate some white cheddar and toss it in flour, stir this into the soup but do not let it boil or the cheese will break. The more cheese the thicker the soup gets. Keep stirring until the cheese is melted and the soup has thickened, this also cooks the raw flour taste out.

Thanks for the response. I was planning on doing some soup tonight, but things didn't quite work out. We had a potluck dinner with one of the car clubs last night. I made a huge pot of paprika pork and noodles, but we got there late, after most folks had filled their plates. So lots of leftovers for the next little while. Maybe next weekend I'll do some soup.
