I am in the start-up stage of a new fast food business which will serve, among other things, russian style dumplings (pelmeni). They are not much different from raviolli in consistency and size. I would like to ask:
1. There are about twelve 15 g dumplings in a serving portion. The dumplings are boiled in water like pasta and then served with either sauce, melted butter or sour cream. What serving cotainers would be best for this?
If you are looking for serving in house I would recommend a shallow bowl. If you are selling to go out of house I remember we used to buy them frozen from a Russian Deli back when I was a kid and they were in a plastic netting like the kind you buy oranges or muscles in.
