I am a newby to the forum also. I used to be a dessert chef and caterer many years ago and left the field. I guess though I don't feel right being called a chef because I didn't go to culinary school. In fact in the 70's when I was in high school, no one even told me that there was such a thing. I hope to learn a lot by reading what you write.
