Does anyone know about the Italian cheese called "stracchino" or sometimes Certosino or Certosa (after the cistercian monks that must have made it - though it might be a brand name).
It's a very mild but tasty soft shiny cheese (same thickness, maybe, as cream cheese, but cream cheese is not shiny) - related to gorgonzola but without the mold, and slightly softer. I wondered if it's available in the States or in England. I know two people, one in each place, who would die to be able to find it but they never can. One is in Boston, the other in London. Anybody from either place who knows where to find it? and anyone know how to make it? (I imagine it might be very hard to make at home, but just on the far chance...)
