this is a pretty rough recipe b/c i dont exactly have a recipe, i just kind of eyeball it.
6 red tomatoes
1 red onion
3 cucumbers peeled
6-7 cloves garlic
pulse in robot coupe until small dice but not puree'd
add chopped cilantro, and adjust the consistancy with V8 juice. season with salt, pepper and lemon juice.
its a pretty basic recipe, but if the ingredients are fresh and you season properly its an outstanding gazpacho. if you want to do something a little different use half the amount of tomatoes, skip the v8 juice, substitute mint for cilantro and add some nice seedless watermelon.
