I've been baking brownies for my small business using an 18X13 pan and turning my home oven on convection and baking them for 30 minutes at 325. I now have a proffessional convection oven that bakes 5 sheet trays up top and 5 on the bottom. Any advice as to what I should set the temp at and baking time for. I'm really nervous I'm going to waste lots of ingredients figuring out proper bake time and temp in this new oven.
