I first saw that in the 60s or 70s. We just used it like regular unsweetened chocolate squares, it didn't add that much extra liquid that we had to compensate, but then we weren't doing large recipes. I recently had a recipe that called for it, I just used regular unsweetened chocolate and melted it. It is just a gimmick for people who can't or don't want to melt chocolate.
