I am currently in charge of a Spanish and Latin American cuisine program. I love the job for all of it's freedom, (I write 12 weeks of menu's for any latin or spanish dish I wish, I just started making fresh pasta) but the catch is that the pay is terrible. I don't think I can afford this job for much longer.

As a side note, if any one has a favorite Latin dish I'd love to try it out. I'm currently playing around with differt infused pastas and it's pretty enjoyable. I love making pasta from scratch.

I would like to continue working for this company in the summers, and find a higher pay job over the winters... any suggestions? I am willing to uproot and travel. In fact last winter I did some personal chefing in Mexico for vacation and extra cash. :smoking:
