Back from the Outer Banks

hey guys

I'm back from a week vacationing with the family in the Outer Banks, NC! we had a great time...great food, great family = great time (forget that the sun didnt come out 3 of the days we were there!)

So on the way out, I stopped at a local fish market and bought some stuff.

Wahoo- ate at restaurants a few times, cooked myself 2-3 times

Bluefish- what is this? it was marked as "local" and it was on sale. I bought 3 filets. They are pretty small (about 3 inches long)

Tilefish- I had it for the first time on this vacation trip and enjoyed it. I bought 1 big filet (about 8-9 inches long) what is it?? how do you make it? whats it taste like?


So, whats your favorite way to make these? and what the heck is this blue fish?

PS- my wife is pregnant. I read she cant eat the Tilefish bc of the possible mercury levels, but i dont know about the other 2. She enjoys the wahoo- so i am hoping she can eat that one. I dont know what i am going to do with the bluefish or even what it tastes like.

Ahhhhhh, bluefish! Nothing to do with my avatar here. :lol: But I love love love it. I think of it as a summer fish, even though it's not very summery here no matter what the calendar says. :( Pretty much all up and down the Eastern seaboard, we get a lot off Long Island. A very oily fish, dark flesh, strong flavor -- a lot like mackerel, if you're familiar with that, but bigger. I'm surprised yours were that small. Quite a fierce fish: a friend goes out for blues and stripers, and had a lot of fun fighting them. When we were butchering roundfish in school, my bluefish had another, smaller fish in its stomach. :eek:

Since it's fatty, it can take being broiled. I like to put it in a baking dish, cover with a mix of chopped tomatoes, chiles, onion, and garlic, top with crumbs, and bake until the veg are hot and bubbly and the fish is cooked through (time varies, but I do it at a fairly high temperature). It can take a lot of other strong flavors, since it has a lot of flavor itself.
