I would start with some basic foods like authentic mexican tacos. I lived for a while in Michoacan, Colima, and Jalisco, so I can tell you how they do them. Just find your meat recipe, then make your taco in the following way.

Ingredients:
Meat (adobada, pastor, chorizo, asada, etc.)
Cilantro
Onion (raw)
salsa
corn tortillas (fresh if you can find them, or make them yourself)
Limones (close to our limes)
salt

Directions
finely chop the cilantro and onion. Mix about 1 part cilantro to 2-3 parts onion. Make sure your tortillas are nice and hot. Grab two tortillas, add a little meat, a little of the onion mixture and top with a nice authentic mexican salsa (or pico de gallo). Squeze a little lime juice on it and salt it. They are the best tacos ever (especially if you get good meat).

One of my friends is a chef at a local Mexican restaurant. He says, and I quote, "Ask Abuelita." He explained what meant by putting it terms that I, as an Italian chef, could understand.

The best recipes, according to him, are those in the memories and cookbooks of old Mexican ladies.
