easy pumpkin ice cream

Found this recipe and made it. 1) since Ice cream is sold 1 1/2 quarts not 2 gallons this can be used to make 2 1-1/2 gallon containers. 2) it tasted kind of gritty which i figured might be the granular sugar, so can powder sugar be used instead.

1 (15 ounce) can pumpkin
1 cup white sugar
1 teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground cinnamon

DIRECTIONS: 1. In a large bowl, combine pumpkin, sugar, salt, ginger, cinnamon and nutmeg and mix until well blended. Stir in pecans. Fold in ice cream. 2. Line a 9x13 inch dish or sealable plastic container with 18 cookies. Spread half the ice cream mixture over the cookies. Repeat layers. Freeze until firm.

Is this from the kooky semi homemade woman of the food channel??
the grit from the sugar and spices sticking together
REAL pumpkin Ice Cream is much easier to make from scratch!
