Your kitchen personality

Sara, you are so nice on your show, and knowing what I know about professional kitchens, I just cannot picture you working the line. Were you always this nice on the line as you were on TV or did you sometimes have to adopt an, uhm, "different" personality in the heat of battle?

lets put it this way, everything that Anthony Bourdain said in "Kitchen Confidential" was true for me too.

ARGH! Now that's like saying that my other culinary godess Julia Child used to do lines in the bathroom with Jacques Pepin in the eighties!

Don't we all have different personas in the heat of the moment?  I know I go from mild mannered to " I need table 84 YESTERDAY!!" in the heat of it when we're busy and people aren't concentrating. 
OK ... where am I going?.. and WHY am I in this handbasket??
