You know what, when I worked in a bigger kitchen I used a knife roll because I had more room to open the **** thing!
I'm in a smaller kitchen now and I moved into a tool box because it literally takes up 10% the area my open kitchen roll took up..

Personally I have trouble finding knife cases myself!
I like the knife roll because you can roll it up and carry it on your back with the shoulder strap.
The toolbox is handy though, because you can carry a bunch of random little tid bits easier in them, but they are slightly harder to lug around.

I've yet to come across a perfect knife/equipment holding apparatus..

[Edit] Heh, I didn't know d.a.m.n was an offensive word!! [/Edit]
