Soybean Milk

It is easy to make and lots cheaper than buying at the store .

1 14oz bag soybean
water
7 cups water

Soak bean overnight . Next day, drain and grind bean in a FP or a blender . For each cup of bean, add 1 cup water when griding . Put ground bean with liquid in a piece of thin cloth, squeeze out the milk into a large pot . Cook at medium heat for at least 15 minutes .

Can add a litle sugar, keep in glass container . REfrigerate . Good for one week .

You can use this milk to make soft tofu .

Making Soft Tofu

We eat soft tofu with brown sugar syrup cook with ginger as a snack or dessert

3 cups soybean milk
1 1/2 teaspoons Knox gelatin
1/4 cup water

For syrup

1 1/2 cups brown sugar (if you can get block sugar, it would be better)
3/4 cup water
1/2 inch ginger root, peeled and cut into thin slices

Sprinkle gelatin over water and let softened . Bring milk to a boil at medium heat . Add genlatin and cook until all dissolved . Pour into a bowl and refrigerate for at least 6 hours or overnight .

Cook sugar with water until slightly thickened . Mash ginger in a mortar &pestle.Add ginger to syrup and let simmer for 1 minute. Remove from heat and keep in a jar and place in refrigerator to cool .

Spoon tofu into a bowl, pour about 3 tablespoons syrup over and eat .

Soft Tofu making this way can be served cold only .

Knox gelatin

What is Knox gelatin and where to get it? Thanks u.

Knox is just a brand name for powdered gelatin.

If you can't find powdered gelatin where you are, see if sheet gelatin is available. If not, you can probably substitute agar.
