I need a cornbread recipie please!! (UK Chef )

I really need a simple cornbread recipie. I can easily get cornmeal but not buttermilk so a yoghurt or milk recipie would be best. I am looking for a plain recipie that I can add chillies,sundried tomatoes etc to when required to accompany different dishes. If poss I would like measurements in grams or ounces not cups.



ps I will be cooking it in a lodge 10 3/4 inch cast iron skillet in the oven so any tips on that also appreciated!

* 1/4 pound butter
* 2/3 cup white sugar
* 2 eggs
* 1 cup buttermilk
* 1/2 teaspoon baking soda
* 1 cup cornmeal
* 1 cup all-purpose flour
* 1/2 teaspoon salt

Buttermilk = 1 qt. whole milk 1 ounce white vinegar set in warm place for 1 hour.

You can convert, there are 8 ounces of liquid in a cup

* Customize Recipe by adding sun dried, peppers, kernel corn etc.


1. Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.
2. Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the PREPARED pan.
3. Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.

I experimented with a very easy recipe with Soy Flour if your interested! It turned out good and is not full of fat and carbs!

1 cup Soy Flour,
3/4 c of egg beaters
2 tsp baking powder,
1/2 cup Smart Balance Ligth Butter melted
1 can baby corn, canned,drained

add 2 to 3 tsp of Splenda if you want it sweet, other wise it turns out a little salty because of the Smart Balance

Preheat oven to 350.
Grind corn in food processor until fine like corn meal.
Pulse in eggbeaters.
Sift soy flour with salt and baking powder.
Pulse soy mixture in with the corn, eggbeaters until well blended. Scrape sides to ensure this.
Blend melted Smart Balance into the batter.
Spoon into greased pie pan or muffin pan
Bake for 20 minutes or until golden topped and toothpick test is dry.
