Low calorie diabetic desserts

Hi, I work at a retirement home and there's a lady who has recently joined us that is very overweight and suffers badly with her diabetes. She and her family are complaining reagrding the desserts she is getting - too much fruit and low yoghurts.

Does anyone have any recipes that would be okay for her? I've looked on the NHS website and the dessert recipes that they have aren't low calorie and should be only used on special occassions. Any magic recipes that will be okay for her to give her regularly?

She'd be better off avoiding puddings altogether. If she's overweight, then it becomes even more important!

Seriously, fruits should be kept to a minimum. A friend of mine has been told by her consultant that he never wants her to eat another portion of fresh fruit - or fruit juice. Harsh? Yes, but he's determined to get my insulin-dependant friend back on the straight and narrow asap.

Haha, dieting woman in 'you shouldn't eat puddings' shocker. I know what you mean, we've talked about it in the kitchen but the nurses upstairs are getting it in the neck all the time from the lady in question and her family so they bring it down to the kitchen. I've been to the Healthshop today and found some Sheep Icecream (source, not flavour :D) and that's 75 cals and less than 10g of sugar per 100g.

I've been told that <20g of sugar per 100g should be okay for diabetics who aren't insulin dependant so that level of sugar sounds low, especially for a dessert. I've mentioned that we need more training on what diabetic residents can have but nothng has come of it thus far. Having to look into it myself atm.

Make no sugar jello then fold into low fat no sugar added melted ice ream. Let it set and its ok. a form of bavarian cream. I am diabetic and it is not all sugar, its the carbs that are worse for you.:)

The advice we were given is to read the contents on everything you buy, and keep both the fat and the sugar to 10g or less per 100g. If its a little over on one or the other, I still get it but not often.
