Yes. I just cut off the very bottom bit which often gets discoloured.

Between the Cap and the bottom of the stem...you will see a clear line.
As a rule of thumb, anything above the line and the cap will be tender and
can be used.

As long as you trim off the growing medium/dirt, sure, the stem is edible. Chop it, dice it, leave it whole for making stock -- as long as it's clean, it's usable.

If they are really large and kind of tough then I use them for stock. If not too big and seem rather tender then I will finely chop them and use them.
