i make tomato soup at work often, for about 30 portions my recipe is:
250g Butter
250g Plain Flour
750g Mirepoix (onions, carrot, celery, leek, fresh thyme)
6 Litres of Vegetable Stock
1/4 litre dry white wine
1 large tin of chopped tomatoes
1 tin of tomato puree
3 garlic cloves
Bouquet garni
Seasoning
-sweat the mirepoix and garlic in the melted butter until soft.
-on a low heat add the flour and mix in well, add the wine and gently cook the roux for 4-5 mins.
-add the chopped tomatoes, stock, bouquet garni, and season lightly.
-bring to boil and simmer for 15 mins, then mix in the tomato puree.
-remove from heat, blitz the soup with a hand blender and pass through a chinoise at least twice to ensure all the thyme twigs are strained out.
-check and correct seasoning and consistency - can add more tomato puree to thicken or more stock to let it down. if you chose not to use a roux, more tomato puree will be needed to thicken the soup, or you could just use cornflour which is gluten free friendly.
Optional additions to tomato soup= Smoked Bacon lardons, Pancetta crisps, Basil, Oregano, dbl cream to garnish.
if cooking tomato soup with fresh tomatoes add brown sugar to take the edge off the bitter taste of fresh tomatoes :thumb:
