Deli Cheesecake

Looking for a new twist on cheescake and wanting a tall slice....here is a great spin .

1 1/2 c. graham cracker crumbs
1/3 c. icing sugar
1/4 c. melted butter

5 - 8 ounce packages of cream cheese (room temperature)
6 eggs (room temperature)
1 Tbls. Vanilla
1 1/4 White Sugar
1/4 Tsp. Salt
3 Tbls. White Flour
500 ml Sour Cream


Mix top 3 ingredients together and gently pad a 10" spring form pan with graham cracker mixture, coming up a 1/4 inch on the side of pan.

Cut up the cream cheese into squares and alternately add the eggs and cheese together on a slow mixer for 10 minutes ,adding balance of ingredients and gently blend till combined.
Bake in a 350 F oven for 1 1/2 hours
Then take out and add the sour cream and bake for 20 minutes.
Refrigerate overnight and serve with any topping.
This is my recipe and has been a family tradition for years.

I normally drizzle caramel and chocolate sauce on top and sprinkle toasted almonds.

Twist on your recipie

If you are looking for a new twist on your cheesecake you could go for a simple tripple berry sauce I usually make that is really simple.

Strawberries
Raspberries
Sugar
Cornstarch
Water
Cranberry Juice
Orange Liquor(optional)
Raspberry liquor(optional)

What I do is get a hand full of raspberries and strawberries(more or less depending on how much you wanna make) and boil it in water and sugar until the water turns red then strain it. After you strain it add it back to the pot and add the cornstarch and cranberry juice and let it reduce untill your desired consistency. if you want a little added flavor add about a tbsp of each of the flavored liquor. And enjoy

Also if you want to you can swirl that same sauce recipie into the cheesecake before baking with a butterknife to create a "swirl" effect often seen in stores and photos.

What I also considered doing recently was adding lemon and orange zest to make a citrus flavored cheesecake. but I didn't work on it yet. so if you want feel free to try it and tell me the results.

I also love to use a bottle of black current jelly, empty it in a pot, bring it to a simmer and then gently toss in whatever berries I have on hand, let it cool, then spread it on the cake. Makes for a terrific glaze.
