Buttermilk Breakfast Donuts

1/4 cup shortening
1 cup sugar (plus sugar for sprinkling)
2 eggs
3/4 cup buttermilk
3 1/2 cups all purpose flour
2 teaspoons baking powder (make sure it is fresh!!!!!)
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon mace
1/2 teaspoon nutmeg
1 1/2 teaspoons salt

oil for frying (365 degrees F)

Put the shortening and 1 cup sugar in a large bowl and beat to blend
Add the eggs and beat well
Add the buttermilk and blend

In a seperate bowl, put the flour, baking powder, baking soda, cinnamon, nutmeg, mace, and salt and stir with a fork until all the dry ingredients are well mixed

Add the flour mixture all at once to the liquid mixture and beat only until well mixed

Lightly flour a board and turn out the dough.

Roll out the dough until it is 1/2 inch thick

Cut the donuts out with a 2 1/2 inch to 3 1/2 inch donut cutter (with a hole in the middle) and place the donuts on sheets of wax paper

Reroll the scraps and make more donuts until the dough is gone.

Deep fry the donuts 3 or 4 at a time in the hot oil (365 to 375 degrees Fahrenhiet)

Use plenty of oil

Do not crowd the pan

Fry each side about 2 minutes- turn them over with a slotted spoon or a skimmer

Remove and drain on paper towels

Pat with paper towels to remove excess oil

Sprinkle with sugar while still warm
