Phyllo Pastry

Any ideas how to keep cooked phyllo pastry crispy? I have to bake and then transport them.

What are you making with it?

Don't cover it with plastic wrap, it will get soggy. It's in the nature of phyllo dough to soften after a while if the ingredients used are wet. It's best to serve it fresh. If you need to transport it cover it only with parchment paper and leave openinings on the side.
