I finally have my tution to pay for my community college's chef training program, my problem is I am now second guessing my abilities and am in search of any thing that may be helpful to prepare me before entering into the program as my community does not offer many programs.

Welcome to ChefTalk! I think you will be able to interact with many industry professionals that, as you, have second guessed their role in this field. I am reading Nasty Bits by Anthony Bourdain in which he expounds the emotional challenges of being a cook (section of the entitled "Cook's Companion".) I, too, have questioned my commitment to the field that seems to demand so much. I think anybody that cares goes through the same thing.
