I ran across this web site while shopping for "Monkey Dishes"...go figure. I am not a graduated Chef, but have owned my own business for a few years. Trial by Fire (literally) as they say. My menu is pretty standard, but I occasionally branch out with some fancy do-dads. I do have a question about Baked Poatoes tho. We're fixin' to do an "All You Can Eat" Steak night and of course, baked potatoes are on the menu as an option. My question is this: What's the average hold time for them, I do not want to serve "hard" potaoes. My prep is egg white wash, Kosher salt and baked in a conventional oven. I will only need to serve them for a three hour period, will they hold for that long? Any tricks of the trade ya'll care to share? I know this is a simple food, but those are the ones that will bite you in the butt.

Hi Nancyld and welcome to Chef Talk. This is an excellent place to connect with, and learn from, other chefs- with a dollop of avid home cooks thrown in for spice!

Hi Nancyld and welcome to the forum.
How many are you catering for?

I'd be cooking them in rotation. Say 1/2 ready for the start of service, with another 1/4 ready 45 mins later and the final 1/4 45 mins after that.

I wouldn't hold them for much longer than an hour, as they tend to look tired and go brown inside.
Some folk swear by wrapping in foil, but i think you lose the crisp skin that way.

That's kinda what I figured. I am also offering a choice of Mashed or Steak Fries as well, so if the baked potatoes crash and burn, I'm covered :blush:

Just a thought, sweet potatoes cook much quicker than regular potatoes. Might be a nice touch to have a few cooking alongside as a variation.

You are not gona believe this...I was JUST reading a recipe for roasted sweet potatoes.
