hey my name is anthony


I was a former 2nd year appretice chef well i did finish 2nd year but my boss left the kitchen so i decied to take a year off get some money back in the bank but its now been bout 4 years and i havent returned. i started my cooking career at an early age my first job being a kitchen hand (while i was still in grade 10) i worked every weekend and some week nights i did this during collage i loved it so much that i paid my own way through 1 year off cooking school(tafe) after that i was offered a job in a resturaunt as a kitchen hand / cook i was there for about 4 months before i moved to a small town which i got a apprenticeship in a local pub which was i thought alot harded than a city resturaunt there was only me and the headchef in this kitchen and only after 2 months of training i was running the kitchen myself for 2 and half days(mon, tue, wed) i dont like to blow my own trumpet but monday and tuesday nights where getting very busy i was doing 70 to 90 covers in a 75 seat bistro in a 3 1/2 hour time frame. I took pride and care for what i cooked were the headchef didnt he would take real nasty short cuts such as useing the microwave and deepfryer to cook things like meats and veg anyway i was there for bout 2 years when head chef left and the owner of the pub wanted me to take on the lease of the kitchen but i didnt take the offer if would of been to much for me with such little exprince so yea i left cooking and got a job in a major food wharehouse we supply large supermarkets and independent stores.
Now that i have bored you all with my life story i still love to cook i am all ways trying new and wonderful foods which the girlfriend loves. i do miss the chef life abit but i now have a house loan so i cant afford to go back to a apprenticeship which sux. i guess we all make mistakes in life we regret later in life. : - )

Welcome to Chef Talk, Anthony. I enjoyed reading your introduction. You've gained a lot of life-knowledge in your career. Sometimes doing a job very intensely for a time can help you decide if it's really the life for you. We have many members here from all over the globe who've trained as chefs, worked at it for a time, then moved on to something different for a wide range of reasons. On the other hand, we've got members who worked in another career (often it's a technical career such as IT) and who switch to cooking. You're not alone!

You should never regret anything that moved you forward. You'll get where you want in time.
