Welcome to Chef Talk, Christian. I see you've already posted a plea for advice about culinary school; I hope you receive the opinions and guidance you seek. What aspect of the profession most excites you?
Keep in mind there are many culinary-related careers besides working in a kitchen. I advise you to browse in the Professionals' forums (as home cooks, you and I must consider them as read-only). There you can listen in on conversations among chefs who came to the profession later in life, and gauge their experiences against your own. The search tool can help you dig up these threads.
But don't miss the blogs, photo gallery, cooking articles and more. I hope you have a good look around.
Enjoy!

It's the pleasure of making people happy, in a way it's sort of doing something for someone. Also, it combines the ability to be creative, work with my hands, and eat ... 3 things that are important, if not necessary for me to be happy.
While very scared, I'm also looking forward to seeing where this will all end up down the line.
