Keep in mind there are many culinary-related careers besides working in a kitchen. I advise you to browse in the Professionals' forums (as home cooks, you and I must consider them as read-only). There you can listen in on conversations among chefs who came to the profession later in life, and gauge their experiences against your own. The search tool can help you dig up these threads.
But don't miss the blogs, photo gallery, cooking articles and more. I hope you have a good look around.
