possible 48 hr trip to NYC...

my resto tries to give us 2 days off in row, I'm thinking it may be a great time to visit the big apple. Any suggestions on where to go/eat?
the main goal is to upgrade my knives, so bowery east and chelsea market are on the agenda thanks for the advice!

momfuku, or any of David Chang's 3 places.....

There were tasty eats at Chelsea Market several years ago, bet there are still some there.

Brooklyn has some interesting places.

What kinds of restaurants/food interest you?

I like all kinds of food. This trip is a small way for me to broaden my horizons, maybe have an adventure or two...
From the professional side, I'm growing into the fish/saute station where I work, it is challenging and very interesting. Anything that would give me more insight into how others prepare fish well would be helpful. Le Bernardin and Le Cirque would be obvious choices, however, dinner is pricey, (and last minute reso's are hard to get?). Maybe some less well known, but solid restaurants? or should I go for one big meal and dig on street food the rest of the time?
also did some research on knife shops, my top three to visit are the bowery, Broadway panhandler, and brooklyn kitchen. Thinkin about aquiring some Tojiro's. thank you for all your beta in advance
