North Indian cuisine, via flat bread recipe search

I've just spent the best part of my Saturday night viewing the amazing Manjula on Youtube.

She's a North Indian housewife, who certainly knows how to pass on her recipes.

I originally googled flat bread recipes and thought i'd check out her roti recipe. Loved it and spent the next 2 hours watching loads more. I've a line of post-its now with 7 quickly written recipes to try next week.

My friend Suman. Who used to work for me. Is also from North India and tries to
teach me. But she's not very patient. ( Actually i reckon she thinks i'm a bit thick) Manjula is just like her, but i can pause her and rewind...Bliss:)

Suman doesnt have much of a garden, so i grow stuff for her...Methi, coriander, garlic chives? and i let my radishes go to seed as the pods are called Mungri and make a fab curry. She in turn makes me lots of treats

Anyway, She's always nipping off to London or Birmingham to visit family and brings me back sweets and other goodies. So I'm going to surprise her with some of the sweet recipes i've picked up from Manjula. She will criticise them, and tell me how to do them better, but love that i made them anyway. And maybe be a bit more patient with me, once she realises i can follow a recipe.

BTW KYH thanks for the flatbread recipe. But i completly screwed it up. Its in the freezer now, awaiting a pizza topping.

I've continued my search and found one to try. But I'm still confused about the yeast thing. I'm used to fresh and reading conflcting ideas about adapting dried.

I first want to say just how much I enjoyed your warm hearted expressions about your friend. It sounds like a wonderful relationship and the fact that you both can joke and try to please one another with your culinary delights is just so endearing to read.

Indian Flat Bread (done in an oven) Simple to make

1 package active dry yeast
2 teaspoons sugar
3/4 cup warm water
1 1/2 cup all purpose flour
1 teaspoon salt
1/4 cup ghee or vegetable shortening
3 tablespoons plain yogurt

Measure 3/4 cups warm water in a measuring cup. Add sugar and yeast. Allow yeast to soften and stir until yeast is dissolved. Cover measuring cup with towel and allow yeast and water to froth for 5-10 minutes.

In a medium mixing bowl, combine flour and salt. Add yeast water, yogurt, and ghee (or vegetable shortening)and begin to knead for 5-10 minutes, until a dough forms.

Place dough in bowl coated with oil and turn dough around to evenly coat. Cover bowl with towel and allow to rise in a warm area for about 1 hour or until the dough has doubled.

Preheat oven to 400. Divide dough into 10-12 pieces and roll out on floured surface into circles. Place rolled out dough on greased cookie sheet or baking stone and brush with melted butter.

Cook in oven for 8 minutes or until lightly browned and puffed up.
This can easily be frozen.

PS. I wonder what she would think if you searched on youtube , The movie HUM and the song is Jumma Chumma and the actor is Amitabh Bachchan. This is my favorite all time Hindu movie and sound track. I know I am crazy but it was when I studied Hindu cooking for 4 years and just love that sound track. I know she knows the actor ! :)

Did you come across this guy in your youtube search YouTube - Channa Masala Chole Chana?
There's a poori procedure at the end of the video.

The guy's website is hard to navigate, and the sound quality of the videos is... echo-ey, but i like his youtube videos. I dunno, maybe it helps???
