Help with food quantities for 25?

Hi all,

I will be in charge of some items for a Oktoberfest menu for 25 and hoping someone can look over what I've calculate for guantities to make sure I have enough for everyone. I've never cooked for this big of a crowd before.
Their will be 16 adults (6 big eaters), 7 teenagers, & 2 tots.

1 12 1/2 pound bone-in boston butt braised in riesling with apples, prunes & curants
4 1/2 quarts of potato salad=about 7 lbs potatos?
4 1/2 quarts of red cabbage=about 4 2lb. heads cabbage?
6 quarts of a carmilzied vegtable soup? This will be severed as app. in small paper coffee cups.
3 Apple Stack cakes (store bought)

Other folks will be making a macaroni gratin & some sort of green, and the appitizers.

Do my quantities sound correct? Please help! The cooking starts tomorrow for this weekend.:crazy:

Everything looks good except cabbage as it cooks down to nothing I would go 10 lbs.
soup at even 6ounces you have enough for over 30. Butt is close figuring 8 ounce raw weight pp but you said they are big eaters/?

One butt is marginal for 25 people. You've got to figure at least 40% waste, 45% is more common. Allowing for waste, your 12-1/2 pound butt is going to yield around 4.5 oz per head. Thin, ma'am. Mighty thin. 6 oz is adequate, but not particularly generous. Better safe than sorry, and any extra pork will make wonderful leftovers. Also, you can't always find a 12-1/2 butt. I think you'd be better off with a whole shoulder or two 8 or 9 pound butts than a single monster.

Thank you both for saving my butt!!! I was especially unsure about the pork! So I'll do 2 10lb. butts, use 5 2lb. heads of cabbage, and cut the soup back to 5 quarts. That better? I didn't realize their would be that much shrinkage!:bounce:
