Need some help (and questions answered)

I am going to be taking Culinary Management as part of the second career program, and need some questions answered by a chef from Ontario.

Would anyone be able to help me?

I'm not from Ontario, but I am a career-changer.
After 15 years in the Radio and Billboard industries, I threw it all away to enroll in culinary school. It's now 15 years after that, and I'm so glad I made that tough decision so long ago. I'd hate to think where I'd be if I hadn't made that bold move.

What are your questions?
