I have many premature winter squash . Huge lunga Di Napoli. Does anyone know if they can be used like a summer squash for instance in pickle relish? These squash weigh in between 25 and 30 lbs but had to be picked early because of the freeze. I have many mature ones also.

Immature "winter" squash means that the rinds have not started to harden. In that state you can treat them like "summer" squash, in all respects.

So, yes, you can use them in pickle relish, or make pickles out of them, or grind them for use in quick squash bread, squash pancakes, etc.

If you freeze grated squash for later use be aware that they will give up a lot of their moisture, and you'll have to adjust for their wetness when you use them during the year.

Thanks a lot. I have so much squash. I planted 1 hill of 7 different kinds and ended up with over 500lbs of squash. Many have been given away, taken to Farmers market etc, but I have somuch still.
