Well, my cooking background is my mom primarily. As a little boy, my place was often on the kitchen counter watching the happiest chef on this planet who could endure greulling hours and make intensely complicated food that tasted like heaven.
Growing up in Kuwait, India, parts of the US and Hawaii (Polynesian cuisine is unique from all else) gave my palate a solid ability to appreciate a multitude of flavors and learn some universal spice combinations used world over.
I dont have formal culinary training but 'get' all of that from rouxbe.com, infinate cooks books and helpful souls on forums like these.
Food in Hawaii? IT's amazing! Freshness like nothing else. Lots of unusual fruits/ regular food combinations, coconut based foods, pineapples persimmons, hearts of palm, all grown here on the Island is just an example. I could write a 2 page essay on the variety we get here. Going pig hunting, fishing, all of that makes life here unline any other place.
My goal if there was one? Food soverignty. To grow our own food using aquaponics. The most powerful and synergestic way to grow food on this planet. I have seen this, to believe it.
Right now we run a small Hummus business in Hawaii and are wanting to get into the local whole foods etc. This quest led me to this forum. We require an affordable way to grind the beans in large batches to be efficient at this. I have posted more about it on the COOKING EQUIPMENT REVIEW section if you have any ideas.
