I'm Dave and I am a first year culinary student. I have joined this forum to learn everything that I don't learn in school (let's face it, nobody knows EVERYTHING about cooking) and hopefully share a bit of my own knowledge and help someone out. Great to be here!

I bought one of these just for making osso buco. I found myself using it for a lot more than just that. I make tomato sauce in it, chili, any excuse I have to bust it out, I do. I absolutely...

One of my first internet knives. Great blade. I mean *great* but the handle was a bit weird. Right now it just sits at the bottom of my knife kit.

I've owned one of these for over 3 years now, using it daily. I've never had to sharpen (grind) it, just an occasional run along a fine steel, and it's held a wonderful edge for everyday prep....

Hello Dave and welcome to Chef Talk. I'm an Illinois native who's "emigrated" to Wisconsin. Where are you going to school? You'll want to stop in at the Culinary Schools/Culinary students' forum elsewhere on the board.
What gave you the impetus to head off to culinary school? Was there a person or experience that inspired you?
Have a look at the whole site, and don't miss the cooking articles, photo gallery (and the contest going on), blogs, etc. We have a good search tool here too, so let it help you find topics of interest to you.
Welcome!

Hi Mezzaluna! I am going to the International Culinary School at the Illinois Institute of Art. (Formerly Art Institutes, people kept getting the confused with the museum.) I have always loved cooking, but spent my time doing boring pointless jobs. I was laid off in February and decided I needed to find some direction and a real career path, so I returned to my old love.
