catering questions

Hi,
I have no professional experience catering. I am helping a friend w/ a party. She is having 140 people and it's at 7 pm . She will have 3 pasta entrees and appetizers. I was going to make the appies for her. 5 appetizers each person..... Bruschetta w/ marinated peppers/goat cheese,Spanakopita,crusite platter w/ sun dried tomato dip,blue cheese walnut crackers,wonton cups filled w/ black bean salad,grilled zucchini canapes w/ feta,roasted peppers andeggplant, tomato/pesto tartlets and fried ravioli w/ arriabiatta sauce. Also doing two salds to go w/ the meal. A Greek salad and Spinach salad w walnuts,dried cranberries and balsamic vinaigrette. Dessert..brownie tart w/ fresh cream,cookie tray and fruit platter w/ cannoli cream,carrot cake.

I was wondering if I have way too much food/choices and how much salad is needed for this many people?

There's a lot of variety.

Bruschetta w/ marinated peppers/goat cheese,
Spanakopita,
crusite platter w/ sun dried tomato dip,
blue cheese walnut crackers,
wonton cups filled w/ black bean salad,
grilled zucchini canapes w/ feta,
roasted peppers andeggplant,
tomato/pesto tartlets
fried ravioli w/ arriabiatta sauce.
Also doing two salds to go w/ the meal.

+ three different pastas.


Consider combining the vegetables and making a roasted veg platter instead of individual aps.

Wonton and black bean salad doesn't fit the rest of the mediterranean theme. Cranberry beans or Cannolini beans seem more in line.

Fried Ravioli seems like overkill with 3 pastas for dinner.

Greek Salad and Spinach Salad are diverse enough that both are fine, but typically I'd do one green salad instead of two.

If this is for money then you guys have gone pretty far overboard with volume and variety. If it's a group of friends celebrating that's another story....

Thank you Shroomgirl for your reply. I just have another question. The salads how do Iknow how much salad to buy per person? IT's for a friend celebrating geting back into her house after a fire.
