Welsh Rarebit is an old fashioned form of a heavy cheddar cheese soup. Made with ale served over buttered toast points. YUM YUM on a brisk day.

I make Welsh Rarebit a lot in winter - but the texture is far too thick to have ever been considered a soup (at least here in the UK)!

Did you know that if you top rarebit with a poached egg it's called Buck Rarebit? ;)
