I bought a bunch of tortillas but only hate a few. I don't want to eat tacos all week long - can I freeze them? How do you freeze them so they're easy to thaw and separate?

Yes, absolutely you can! I use two different methods for the tortillas I buy in the supermarket. The corn ones come in a stack of 20 to 25, the larger flour, 10 to 12. (I could probably buy freshly made if I wanted to travel a little, but we like the fairly fresh. locally made supermarket ones well enough. :blush:)
- for corn tortillas, I portion them into serving-size piles (4 or 5 for the two of us), put each pile in a resealable plastic sandwich bag, then stack the bags back in the original plastic bag the tortillas came in, and twist-tie it closed. Then when I need some for a meal, I take out one small bag and let it thaw.
- for packages of flour tortillas, I interleave the tortillas with waxed paper and again put them back in their original resealable plastic bag (or a clean resealable bag if the original can't reclose). The waxed paper keeps them from sticking together, so I can take out just one or however many I need.

I freeze them interleaved with grease proof paper - kind of like when you buy ready made puff pastry sheets. Into plastic sealed bags. Freeze.
In other words, what Suzanne said :)
I usually gently slide a knife between the layers, then if I have the oven on they go in there to loosen up, or nuke them for a bit in the microwave.
They're a good standby for emergency cooking - guests arrive, got nothing. Quessadillas (sp?), pizza type dish, or grilled (broiled) then torn up for dippers with hummus etc.
