High roast turkey breast?

Hi-
The past few years I've made a high roast turkey and it's come out very well. I don't see why it wouldn't work with a turkey breast. True, I'd be missing a few necessities for the gravy, but it would really cut back on leftovers.
Anyone have any thoughts about a high roast breast over a mound of stuffing?

Depending on the timing, you may need to keep all the stuffing under the bird so it doesn't scorch or burn on top. But crusty stuffing is the best so maybe just cover it for the first part then uncover for the later part to get some crust.
