I'm struggling to find a butane canister to fit my iwatani. As I live in a small community I have limited options. I read the reviews and figured I could find a canister to fit my needs. However, not sure if I'm attaching it wrong or if I am not finding the right canister. It appears that the canisters I do find have too long of a point and I cannot lock the canister into the torch. Any suggestions?

some canisters for the iwatani (at least in my experience) are somewhat hit and miss. some brands work a lot better than others. i've come across a couple brands that started spurting, and another that didn't even release gas. poor quality canisters? who knows.
it's pretty straightforward attaching a canister, you simply press down and twist. i doubt it has anything to do with you attaching it incorrectly. you can easily find a small bulk of butane canisters on amazon or ebay. most asian markets carry butane canisters as well. it's very popular for the hotpot (shabu-shabu) crowd.
I purchased the Iwatani torch last week. I didn't notice it until a few days ago but as the nozzle heats up (glows red hot) the flame starts to turn orange, mainly at the bottom. I was going to return it but am unsure if that was normal or not. Am I correct that an orange flame is the result of incomplete combustion? Since it'll be used for crème brûlée I am worried about the taste of butane.
There is both an air adjustment as well as a flame adjustment.

I use a Bernz o Matic axailable in Home Depot. as I can use it for other jobs as well. It is also better if doing quantity as is a standard hot broiler.
All that really counts is the color and length of the flame's central "core." I think what's happening is that as the torch barrel starts to heat up it heats up the surrounding air and the surrounding orange is the visible result. Going from nothing to yellow to orange, indicates increasing rather than decreasing heat -- so all is well.
The orange flame is not as hot as blue the flame, use your distances accordingly.
