Are you saying you don't want to cook, or that everything has to be raw? Can make a difference.
For instance, pre-cooked shrimp are readily available, and can be used in numerous appies and salads. But that won't work if everything has to be raw.
Meanwhile, here's a salad idea that seems to sit well with everyone I've served it to:
Tomato Cuke Salad
1 med cucumber, peeled and cut into 2" julliene strips
1 large tomato, cut in julliene strips
Extra virgin olive oil
Freshly squeezed lemon juice
Pinch coarse (kosher) salt
Pinch cumin seeds, toasted and coarsely crushed
Toss the tomato and cucumber together. Portion onto salad plates. Drizzle with olive oil, followed by a squeeze of lemon juice. Sprinkle with salt and cumin seeds.
If desired, some halved black or purple olives can be scattered in with the other veggies before dressing.
